Ingredients we need:
- 1/2 cup of butter
- 1 1/2 cups all-purpose flour
- 2 tablespoons brandy; Hennessy preferred
- 3/4 cup granulated sugar
- 3 eggs, separated (keep the egg yolks in one bowl and the whites in a separate bowl)
- 2 teaspoons fresh lemon juice
- 1 teaspoon pure vanilla extract
Step 1 :
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius ). Place a rack in the center of the oven. Butter a 9-inch (23 cm) round cake pan.
Step 2 :
Mix flour, brandy, and sugar in a large bowl by hand.
Step 3 :
An electric mixer beats egg yolks and lemon juice in a medium bowl.
Step 4 :
Whip egg whites with the stand mixer until soft peaks form when you remove the beater.
Step 5 :
Gently fold the egg yolk mixture into the egg whites.

Fold one-third of the flour mixture into the egg white mixture. Then fold in half of the remaining flour mixture and mix until combined. Repeat with the rest of the flour and then fold in, 1/3 at a time, until all of it has been mixed. Do not overmix, as this will result in a dry cake.
Step 7 :
Pour batter into the prepared pan and smooth out using an offset spatula or small flexible metal pastry brush to even out any peaks or bubbles.
Step 8 :
Bake for 25 to 30 minutes or until cooked through and golden brown on top.

Let cool completely before serving. Serve the cake in a cute glass, or go retro with the tradition of serving this cake in a long-stemmed wine glass!
